Cacao chia pudding

Ingredients:

  • 2 cups of coconut water

  • 1/2 cup of organic chia seeds

  • 4 tablespoons of organic cacao powder

  • 1 tin of organic coconut milk (400g)

  • 1 1/2 teaspoons of organic maple syrup

  • Handful of organic blueberries

  • Handful of organic cacao nibs


Method:

Step 1 - Place the coconut water and the chia seeds in a bowl and mixed them well for a minute. Leave them resting for 10-15 mins until they become jelly.

Step 2 - While waiting, mix the coconut milk, cacao powder and maple syrup in another bowl and whisk it until well combined.

Step 3 - When the chia seeds have soaked all the coconut water, mix the contents of both bowls and mix them well with a whisker or a big spoon until well combined

Step 4 - Store in the fridge for at least 5 hours before serving.

Step 5 - Serve in a bowl and sprinkle with cacao nibs and blueberries (or any other berries of your choice)
